| COMBRO |

I tried combro only when I went to Jakartalast November , my friend Rosni brought me to Mangga Dua . It tasted quite nice .. although not my favorite one but recently I got this sudden craft of having another combro again .. but what to do . how to find combro in Singapore?? again , I have to make it by my self … poor me .. surf Internet again and found 2 combro recipes..I tried to combine with Rosni’s recipes too . here it is :
Inggr. For skin : ½ Kgs Tapioca – Grated ½ coconut – grated Mixed the above , add salt and pepper , can add seasoning too ..
Inggredient for filling : 250 gr Tempe - fried half cooked – finely crush
Finely pounded: 5 ea Onion 3 cloves Garlic 4 x 4 cm Belachan ( shrimp paste?) – optional 6 ea Chilly Padi ( if u like spicy put more if u don’t like it hot put less )
Stir fired above ingr. And add Tempe crushed .. stir fried for approx. 5 minutes . leave it cool.
Take the skin Ingr. .. round it and then press , filled with a pinch of tempe ingr and then cover with skin Ingr. Deep fried till golden brown. Tips to fried : do not fried in very hot oil .. keep the fire moderate or else you’ll burned your COMBRO.
Hmm I ‘m so proud of my self now.. hehe…

| Rempeyek Bayam |

I made Spinach cracker Rempeyek Bayam last night , everybody love it . recipe as follows :
1 ikat bayam diambil daun nya saja - Spinach leaves Tepung beras - takarannya secukupnya – Rice flour Santan - coconut milk Air - water Salt
( Mix well above Ingr. & remember the mixture can not be too thin like rempeyek teri kacang but instead make it thicker)
Finely pounded :
4-5 cloves of garlic 2-3 candle nut ( kemiri ) ¼ tsp pepper ¼ tsp coriander
Dip the Spinach leaf in to the mixture and deep fried in the medium fore till a bit golden brown . Ready to serve with chilly sauce …yummy…

| Pergedel Jagung |
Pergedel jagung is one of my favourite dishes , so yummy . I just made pergedel jagung yesterday , stay in Spore forced me to master all those Indonesian favourite food .
Recipe as follows : 4 ea large corns -2 ea grated coarsly and 2 ea finely 5 tbs self raising flour 2 tbs tepung beras 1/4 tsp merica 1/2 salt 1 egg half a glass water
Finely pounded : 4 ea red onions 2 ea garlics mix all above ing. well and can add chilli, cerelly as you like .
deep fried 1 spoon each in hot cooking oil till golden brown . ready to served...Labels: Deep fried |

| Tahu Kuchai |

Again one of my favorite dish from my mom ... it's fried Tofu actually but the smell of kuchai is really made it fantastic . here is the recipe in bahasa :
4 buah Tahu besar - di potong segi tiga atau sesuai selera
bahan kulit : 5 sdm tepung beras 2 sdm tepung terigu garam secukupnya Telor 1 bh penyedap dan bubuk merica secukupnya air secukupnya , jgnterlalu encer dan jgnterlalu kental semua bahan diatas dicampur dan aduk hingga rata 50 gram kuchai - potong pendek2 - masukkan kedalam adonan tepung .
celupkan tahu kedalam adonan tepung ebelum di goreng kedalam minyak panas hingga ke coklatan . sajikanhangat .... Labels: Deep fried |

| Pergedel |

Pergedel , Teman buat makan soto Medan I posted ealier . ibu mertuaku juga sering buat pergedel ala Spore ..tapi ntah kenapa tetap saja pergedel buatan mami serasa lebih nikmat dilidahku .. ini resepnya;
1 kg Kentang - di rebus sampai setengah masak - peel the skin dan deep fried. - lalu di tumbuk halus . - daun seledri & daun bawang secukupnya di cincang - Kuning telor 2 buah - Merica bubuk - 1/2 sdt - pala bubuk 1/4 sdt - garam - bawang goreng semua baham diatas diaduk rata degn kentang tumbuk td di bulat kan .. dan celupkan kedalam putih telur sebelum di goreng .
tambahan , boleh juga di beri ayam , caranya ayam dicincang dan di tumis dengan bawang putih /merah sampai wangi ..masukkan ke campurankentang tadi ..

| Doughnuts |

Got this recipe from Internet , this is my 1st time trying to make doughnuts.you should try this recipe too coz it very soft and delicioussss..
3 Medium size Potatoes –boiled and smashed 250 gr all purpose flour ( if still too sticky add more flour) ½ tsp yiest 2 eggs – beaten 1 ½ tbs margarine – melted and cooled 2 tbs castor sugar 2 tbs milk powder 1 tbp Baking powder
Directions: Sifted all the dry ingredient (except sugar) in to a bowl - make hole in the middle . add beaten eggs and melted margarine and sugar , mix well. Add smashed potatoes ,beat for sometimes.. Leave them in a bowl and cover with wet cloth for about 1hour until the batter rise. Shaped with Doughnut mould , fry until golden browned.
Topping : I’m using 3 different topping : -Icing sugar - can use special doughnut sugar as well for better taste if not icing sugar will do but apply when the doughnut still hot . then re-apply again after cooled.
- White chocolate melted with whipping cream with chopped nuts . Dip one side of golden browned doughnut on to melted white choco and pour the chopped nut on top.

| Sambel Teri kacang / Spicy tiny sea fish w/peanut |
This is one of my most favourite dishes , I can just have ‘em with plain rice and eat till drop, really .  My special Recipe as follows: Teri / Tiny sea fish - I preferred the smaller type one. – Fried Peanut - fried Finely pounded ingredients: 6 red chilies ( add 5 more chili Padi if u want more hot but do not pounded or chopped just cook the whole chili) 2 garlic 2 red onion 2 tbs dried prawn ( Hebi) Prepare the skillet , stir fry the finely pounded ingr. For 1 minute – remember , do not add any single drop of water if you want the Teri crisps, add Teri and peanut .. mix them well. There u go – can store in the container for sometimes too. | Rempeyek |

Sometimes people use either Peanut only or Salty tiny sea fish ( Teri or in Spore people call it ikan bilis) . For me , I like to mix them both .. I love peyek and i think everybody will love this peanut and tiny fish crisp.. realy yummy ... gosh I have to swallow my saliva already ... Straight to the recipe:
155 g (5 oz) peanuts 100 g Ikan Bilis ( small and white type )100 g (3½ oz) rice flour4 tablespoons starch 1 cup Coconut Milk + water 4 cloves Garlic 6 ea candlenut Half table spoon coriander 1 egg Salt ( if using ikan bilis which is already salty , pls don't put too much salt)
Crush Garlic , Candlenut and coriander finely and then mix well with rice flour , starch and coconut milk+ water in a bowl ( make sure that the batter not too thick coz it will make the Peyek very hard .. add more liquid if it is thick) . Wash the Peanut and Ikan Bilis and mix'em with the batter .
Prepare the skillet and oil (@ least ¾ the skilet and fry when the oil hot from the side of skillet) till golden browned.

| Rosti |
 Rosti ,Is this fried grated potatoes originated from German or swiss? not sure either . I knew this food for the 1st time when my Husband brought me to Marche Restaurant here . Since then everytime we go to Marche, Rosti is always be my number 1 choice . Today , I decided to try to make , it is very very simple ...here you go :
Rosti , for 4 servings 6 Potatoes 1 Onion - finely chopped 4 Slice bacon ( Optional) 1/2 cup butter or lard salt and pepper to taste
Directions: Boil the potatos in their for 15 minutes ( but not too tender) Strip off the skin and coarsly grated. mix in chopped onion and sliced bacon carefully. Heat the butter on to non stick pan , add the potatos miture when the oil is quiet hot. lightly pat the mixture in to round cake with spatula. cook over low heat until the underside is crusty and well browned. Flip over and fry further 10-15 minutes until the other side crisp and well browned too. Ready to serve , normally served with sour cream.

| Kacang Tojin |
 Kacang Tojin maybe can be called Salted nut or salted delicious nut , I posted the recipe in Bahasa Indonesia in my adiaryoflove blog. I repeat again the recipe here ..my precious food corner blog :-)
Ingredients: Peanut ( I bought the skin peeled one) if not you can do it by soak them in Hot water for sometimes before started peeling the skin . 4ea garlic – finely Pounded 4ea again garlic – sliced --> very thin or you can just chopped 'em finely . 2ea red onion – slice 2ea Parsley –finely chopped Seasoning and salt for taste ____________________________________________________________________________________________________________
Soak the peanut ( skin pelled ) in to the hot water with finely pounded garlic and salt for approx.15-20 minutes . Leak them and place in a dry bowl , add finely sliced garlic ,red onion , parsley ,seasoning and a bit of salt mix ‘em evenly . leave ‘em for approx. 15 minutes . Prepare the pot/wok and oil for frying and fry the nut until golden brown.
very easy and they tasted so delicious .. if not salty enough ,you can add pinch of salt ( not too much ) I like to put more garlic coz I’m a garlic Lover …Labels: Deep fried |

These cutie meat balls tasted so Yummy and my family love 'em a lot . Can be serve with mustard for dipping or variety of dips, including mustards, chutneys, and barbecue sauces or just go by it self . Ingredient : 3tbl Margarine 300 gr Chicken meat – Chopped 75 gr Plain Flour 300 ml Milk ( just mix the milk powder and water to make it 300ml) 2 ea Garlic – Finely chopped 1ea Onion – Finely Chopped 2tbl parsley, finely chopped 1/4 cup carrot, finely diced 1/4ts nutmeg powder 50 gr Cheddar Cheese - grated 2 ea Egg – beaten with 1 ts water 1/2 cup dry bread crumbs salt and freshly ground black pepper to taste Oil for deep frying _____________________________________________________________ 1.Heat butter in a large skillet over moderate , cook the garlic and onions until fragrant 2.Add the plain flour , stir 3.Add milk , stir until flour and milk mixtured evenly 4.Add nutmeg powder, pepper and salt 5. Place the chicken , carrot and parsley , stir until well cooked. 6. Add cheddar Cheese cook until the cheese melted . take and let it cooler. 7. Roll it into balls about 1 inches in diameter, using your hands 8. Roll the balls in the bread crumbs, then in the egg and water mixture, then in the bread crumbs again. 9. Fry a few at a time in a deep fryer until golden 10. Drain on paper towels and serve immediatelyLabels: Deep fried |
