My 3rd Log cake

Naa.. actually my 4th but I dun want to post my number 3rd coz I can say it's a failure . Dunno Y everytime Fenny came to see and help me bake cake my cake will turned up to be disaster . My mother in law said Pantang lar .. hahaha..sorry Fen .. next time she visit my house again I'll cook instead of baking then .

Fudgy Brownies

Baking cake is my number one choice to spent boring rainy afternoon last Sunday. I made Fudgy Brownies for the 1st time. I got this recipe from search engine à Rina Rinso Blog ( thanks!) and modified the recipe my self .

Straight to the recipe :
Ing A :
80 gr Margarine
150 gr DCC ( Dark cooking chocolate)
Both ing above to be melted and cooled.

Ing B:
150 castor sugar
3 eggs
½ tsp salt

Ing C :
120 gr All purpose flour
150 gr milk powder
25 gr cocoa powder
1 tsp Vanillin
All to be sifted.

60 grm cashew nuts – chopped .
40 grm almond sliced

Directions :

1.beat eggs and sugar with electric beater until smooth , beat in salt and Ing A - stir evenly
2.stir in ing C
3.add in chopped cashew nuts stir evenly
4.sprinkle with sliced Almond
5.pour in to the prepared tin
6.bake in 180 deg temperature for approx. 25-30 minutes or umtil the skewer come out clean when inserted in the middle of the cake.

The next Brownies I tempted to make will be steamed chocolate cheese brownies ..hmm yummmyyy

My 2nd Log Cake
below log cake I made during my baking class @ Phoon Huat last night , I hv to replaced my sis in law coz she could not make it ,Lucky me ..I've learnt a lot from it .

For ex, to bake the Roll must use high temp, @ least 200 deg. and for our oven which doesnt have lower part control temp we must put upside down tray and layer with a piece of carton or wood then put the batter on top. if the temp not enough the top layer will tear off easily.
leave the the cake in the tray cooled for 1/2 hour before strat do the filling , rolled it . keep in the fridge for 1 hour before decorate.

The inside cake above is using Raspberry cream filling Roll .

Doughnuts

Got this recipe from Internet , this is my 1st time trying to make doughnuts.you should try this recipe too coz it very soft and delicioussss..


3 Medium size Potatoes –boiled and smashed
250 gr all purpose flour ( if still too sticky add more flour)
½ tsp yiest
2 eggs – beaten
1 ½ tbs margarine – melted and cooled
2 tbs castor sugar
2 tbs milk powder
1 tbp Baking powder

Directions:
Sifted all the dry ingredient (except sugar) in to a bowl - make hole in the middle . add beaten eggs and melted margarine and sugar , mix well. Add smashed potatoes ,beat for sometimes..
Leave them in a bowl and cover with wet cloth for about 1hour until the batter rise.
Shaped with Doughnut mould , fry until golden browned.

Topping :
I’m using 3 different topping :
-Icing sugar - can use special doughnut sugar as well for better taste if not icing sugar will do but apply when the doughnut still hot . then re-apply again after cooled.

- White chocolate melted with whipping cream with chopped nuts .
Dip one side of golden browned doughnut on to melted white choco and pour the chopped nut on top.

-White choco melted with chocolate grain. Just do the way with the one with chopped nuts

Spicy seafood soup

Straight to the recipe ...

15 ea Medium Prawns - peeled and remove the skin and head ( but do not throw coz we need them for the soup).
1 big cuttlefish - cut horizontally with 2 cm width
10 Fish ball
8 button mushroom - devcide in to 2
100 grm Tofu (special for stock)
11/4 ltr water
4 lemon leaves
2 lemon grass - beat
4 tbl light soya sauce
3 tbs lemon juice
salt and sugar
5 chili padis - beat

Finely pounded ingr :
5 red chilies
4 red onions
4 cloves garlics
1 tsp shrimp paste ( belacan)


Direction : Boil the prawn skin and head with 11/4 water , sifted.
stir fry the finely pounded ingr until fragrant before adding them to the boiled prawn stock .add lemon leaves and lemon grass .
add ligth soya sauce , salt , sugar and lemonjuice . cooked with small fire until boiled.
Add prawn , cuttlefish , fish ball , mushroom , tofu and chili padi .

Note : Do not over cook the seafood ,just until the color change you can off the fire already .
The taste a bit similar to famous Tong yam .

Kentang Sambel Ebi

I love this dish , I have tried in my kitchen last Tuesday I got the recipe from search engine and don't want to wait long to try .
Here is the recipe , it's simple :

Potatoes - cut thin - shape as you like
100 gr Dried prawn ( Ebi) - soak with warm water for approx. 30 minutes afterthat finely pounded and fry withour oil till dried.
4 tbl fried red onion

Finely pounded ingr:
8 red chilies
4 red onions
2 cloves garlics
6 candle nuts
Sugar and salt

Directions:
Fry the cut potatoes till golden brown , leave it .
prepare the skillet , stir fry the finely pounded ingr until cooked and gently mix the potatos and ebi , Done .. isn't simple and easy ..

Heidi's Birthday
Heidi ‘s 4th Birthday last Sunday .. Gosh what a busy weekend!
As my promised to her before I made her a pretty Barbie cake .for the base cake I used my special ingredient , it’s Sacher Torte recipe but I add Almond Ground and it turned up to be still soft and tasted good too . I must admitted that I was a little bit worried if my cake will be a bit hard due to the almond ground and excess Flour . I used Rich Butter cake for the Barbie skirt . I decorated the cake with wild flowers made from fondant ( recipe for fondant posted earlier in November) , I don’t want to buy the ready made Fondant in the store coz I want the cake to be fresh from me to my Daughter .

Beside Birthday cake I also prepared Preserved Tapioka Pudding ( but I don’t know why the tasted is a bit too sweet even though I have reduced the sugar 50 gram from Original recipe I got from from Kictchen craft- I can’t imagine if I follow exactly the recipe my pudding must be too sweet then,

My mother in law cooked Chicken Karee and fried Bee Hoon & Pohpiah :



most food were our home made except Nachos and potato chips dip with Salsa sauce and Chicken wings .
I’m too busy to post Risoles and Preserved Tapioka Pudding recipes , will do it later when I’m free.
