Victoria sponge Cake

Heidi is having a class party today and everyone should bring their own food from home to be shared with their friends. (potluck) . She will bring Victoria Sponge Cake and bitter ballen coz I think Kids will love them .

Here is the Victoria Sponge Recipe :

1 cup Self Raising flour

4 eggs

3/4 cup Sugar

60 gr unsalted butter -melted and cooled

1/4 cup warm milk

Strawberry Jam ( can use rassberry or else too)

Beat eggs using electric beaters until thick and pale ,add sugar gradually beating constantly until it has dissolved and the mixture is pale yellow and glossy.using metal spoon , fold in butter, milk and flour quickly and lightly.

Spread mixture evenly into the prepared tins - make two tins (apply butter and sift flour on to it) .Bake for approx.30 minutes or until sponge are lightly golden and shrink from sides of tins. leave for 5 minutes.

Spread jam on both sponge layers, place together. do the decoration as you like . in the pics above , I'm using white coklat , strawberry and fondant . on top of the cake I poured white chocolate -cream mixtured. just mix the white choco and cream and then stir over low heat until the choco melted and the mixture is smooth. spread on top of the cake.

Bitter Ballen's recipe can be find in the earlier post.

Cheers..
